Avocado and Arugula Salad - posted for Jamie:)

Ingredients:
5 ounce bag of baby arugula
1 avocados, pitted peeled and diced
1 large tomato (or 2 small-medium tomatoes), chopped into bite sized pieces
1 tbsp fresh lemon juice
2.5 tablespoons olive oil
salt and pepper to taste
1 tbsp red wine vinegar
1 tbsp dijon mustard

Directions:
Add the baby arugula to a serving
dish and top with chopped tomatoes and diced avocado.Wisk the remaining ingredients to use as the dressing. Enjoy!
